Chicken Tortellini Soup- TOO much for my Cutie!!

I said before that my cutie does not like MOST vegetables and I sincerely meant that.  I have been able to get him to eat some things with spinach in it and he will usually eat the onions if they are cut up in something and cooked... Nothing raw for this man!!  Well that Chicken Tortellini Soup turned out AWESOME according to my roomate and I, but not according to my man.  He just couldn't eat the "slimy" spinach in the soup.  He certainly did not know what he was missing.  The Bacon, Chicken & Avocado Quesadillas were pretty good.  My Cutie's only contained chicken, bacon and cheese, which is quite the variation from the recipe listed below.

Chicken Tortellini Soup

~8 cups chicken broth
~1- 14 1/2 oz can stewed tomatoes, cut up
~1- 10 oz pkg frozen chopped spinach, thawed
~1/4 cup grated parmesan cheese
~1/2 tsp salt
~1/4 tsp pepper
~1 tsp dried basil
~2 cloves garlic, minced
~1- 9 oz pkg refrigerated cheese tortellini
~2 1/2 cups cubed cooked chicken

1. In a soup kettle, combine the broth, tomatoes, spinach, cheese, salt, pepper, basil and garlic. Heat to a boil.
2. Add the tortellini and chicken. Cook for an additional 5 minutes or until tortellini is heated through.

Chicken, Bacon & Avocado Quesadillas

~8 bacon strips, diced
~1/2 pound fresh mushrooms, sliced
~1 cup cooked diced chicken breasts
~1-2 Tbsp butter or margarine, softened
~4- 7 inch flour tortillas
~2 cups shredded Colby-Monterey Jack cheese
~1 medium tomato, chopped
~1 ripe avocado, peeled and sliced
~Sour cream and salsa, optional

1. In a large skillet, cook the bacon over medium high heat until crisp. Remove to drain on paper towels, reserving 1 Tbsp drippings. Saute mushrooms in the drippings.
2. Spread butter over one side of each tortilla. Place two tortillas, buttered side down, on a griddle or skillet. Top with bacon, chicken, mushrooms, cheese tomato and avocado. Cover with remaining tortillas, buttered side up.
3. Cooke over low heat for 1-2 minutes or until golden brown. Turn and cook 1-2 minutes longer or until cheese is melted. Cut into wedges. Serve with sour cream and salsa if desired.

In case you already guessed, my Cutie did not eat the quesadilla as descried in the recipe.  Take away the mushroom, tomato and avocado and you are left with bacon, chicken and cheese.  He was full and satisfied, so I guess the point of having dinner was met despite his unwillingness to eat most of what was served.  Hopefully my next meal will be a little more successful with my Cutie.

Cooking for My Cutie

Well, I have never been one to write much down and process how I feel about things in my life.  I have this GREAT friend who has an awesome blog and she suggested that I post all of my recipes in a blog due to doing SO much cooking, so... here we are! I make very few things more than once because I LOVE cooking new foods.
The title comes from my goal to cook the best possible meals for my husband who I recently married.  He eats very few vegetables, so I have to be creative at times.  I am sure that this will turn into something quite interesting with some really good recipes and probably some disasters.
